Ingredients

  • 200g Wagyu beef, sliced thinly
  • 150g mushrooms (shiitake or portobello), sliced
  • 200g fresh noodles (egg or rice)
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1 inch piece ginger, grated
  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • Optional: chili flakes for heat

Directions

  1. Begin by preparing your ingredients. Make sure the Wagyu beef is sliced thinly against the grain, which ensures tenderness. Slice the mushrooms and onion, and have your garlic and ginger ready. Fresh noodles should be placed in warm water to soften before cooking.
  2. In a large pot or Dutch oven, heat sesame oil over medium heat. Add the onions and sauté until they turn translucent, about 5 minutes. Then, stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the sliced mushrooms to the pot, stirring frequently for about 3-4 minutes until they are tender and start releasing their juices. At this point, season with a pinch of salt and pepper.
  4. Pour in the beef broth and soy sauce, bringing the mixture to a gentle simmer. Allow it to cook for about 10 minutes, letting the flavors meld together beautifully.
  5. While the broth simmers, cook the fresh noodles separately according to package instructions. Generally, they only take a few minutes; ensure they are al dente.
  6. After the broth has simmered, add the thinly sliced Wagyu beef to the pot. Cook for about 2-3 minutes – the beef should be tender but not overcooked.
  7. Once the beef is ready, drain the cooked noodles and place them in bowls. Carefully ladle the hot soup over the noodles, ensuring each bowl gets a generous amount of mushrooms and beef.
  8. Finally, garnish with chopped green onions and fresh cilantro. Add chili flakes for a bit of heat if desired. Serve immediately while hot.
