Ingredients:
- 2 cups crushed pineapple (drained)
- 2 cups vanilla wafer crumbs
- 1 cup powdered sugar
- 1 cup shredded coconut (sweetened or unsweetened)
- 1/2 cup chopped pecans or walnuts (optional)
- 1 teaspoon vanilla extract
- Extra shredded coconut for rolling
Directions:
- Begin by thoroughly draining the crushed pineapple from its juice. It’s important to remove excess moisture to ensure your mixture isn’t too wet. Use a fine mesh strainer or cheesecloth for best results.
- In a large mixing bowl, combine the drained pineapple, vanilla wafer crumbs, powdered sugar, shredded coconut, chopped nuts (if using), and vanilla extract. Make sure to use a spatula or your hands to mix everything together well until it forms a sticky dough-like consistency.
- Once mixed, cover the bowl with plastic wrap and place it in the refrigerator. Allow it to chill for approximately 30 minutes to 1 hour. This will make the mixture easier to handle when rolling into balls.
- After chilling, remove the mixture from the fridge. Prepare a small plate with extra shredded coconut for rolling the balls.
- With your hands, scoop out about a tablespoon of the mixture and roll it into a ball shape. Then, roll the ball in the shredded coconut until fully coated.
- Repeat this process until all the mixture is used up, placing the finished balls on a serving platter.
