Ingredients:

  • 1 cup unsalted butter (2 sticks)
  • 2 cups graham cracker crumbs
  • 1 cup brown sugar, packed
  • 1 cup corn syrup
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups chopped pecans
  • 1 cup semi-sweet chocolate chips
  • Pinch of salt

Directions:

  1. Begin by preheating your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, making sure to leave some overhang on the sides for easy removal later.
  2. In a medium saucepan over low heat, melt the butter. When it’s completely melted, add the brown sugar, corn syrup, and a pinch of salt. Stir continuously until the sugar is dissolved and the mixture is well combined.
  3. Remove the saucepan from heat and allow it to cool for a few minutes. Once cool, whisk in the eggs and vanilla extract until smooth.
  4. In a separate bowl, combine graham cracker crumbs and chopped pecans. Pour the butter mixture over this mixture and stir until it’s all evenly combined.
  5. Spread the mixture into the prepared baking pan, making sure to press it firmly and evenly across the bottom. Bake for about 30-35 minutes, or until the edges are golden brown and the center is set.
  6. Allow the baked bark to cool completely in the pan. Once cooled, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring in between until smooth.
  7. Pour the melted chocolate over the cooled pecan pie mixture, spreading it evenly with a spatula. Allow the chocolate to set at room temperature, or place it in the refrigerator for faster results.
