HEARTY CABBAGE ROLL SOUP 🥬🍲
Ingredients:
- 1 medium head of green cabbage
- 1 lb ground beef (or turkey for a lighter option)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup long-grain rice, uncooked
- 6 cups beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh parsley for garnish (optional)
Directions:
- Start by preparing your ingredients. Take the cabbage and remove the core. Carefully peel off about 10-12 leaves. Set the leaves aside. Finely chop any leftover cabbage (you can use this in the soup).
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Then, add the minced garlic and continue cooking for another minute, stirring frequently to avoid burning.
- Increase the heat to medium-high and add the ground beef. Break it up with a spoon as it cooks, until it turns a beautiful brown and is no longer pink. Drain excess fat if necessary.
- Stir in the chopped leftover cabbage and cook for an additional 2-3 minutes until it’s slightly tender.
- Pour in the diced tomatoes, tomato paste, beef broth, and uncooked rice. Stir well to combine all the ingredients.
- Season with paprika, oregano, salt, and pepper, adjusting to your taste preferences.
- Bring the mixture to a boil, then reduce the heat to low and cover. Allow it to simmer for about 20-25 minutes or until the rice is cooked and tender.
- Once cooked, remove from heat. If you used bay leaves, make sure to discard them before serving. Garnish with freshly chopped parsley for a pop of color and flavor.
- Serve hot, and enjoy your hearty cabbage roll soup!
