Ingredients:

  • 1 cup dark chocolate chips

  • 1/4 cup honey or maple syrup
  • 1/4 cup finely chopped crystallized ginger
  • 1 teaspoon orange zest
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • Additional cocoa powder for dusting

DARK CHOCOLATEY WITH ORANGE GINGER SNOWBALLS

Directions:

  1. Begin by melting your dark chocolate chips. You can do this by placing them in a microwave-safe bowl and heating them in 30-second increments, stirring in between to prevent burning. Alternatively, melt the chocolate using a double boiler method over simmering water.
  2. Once melted, remove the chocolate from heat and allow it to cool for about 10 minutes. It should be warm but not hot to the touch.
  3. In another mixing bowl, combine the almond flour, cocoa powder, orange zest, finely chopped crystallized ginger, sea salt, and vanilla extract. Mix well until all the dry ingredients are evenly combined.
  4. Pour the melted dark chocolate into the dry mixture. Add the honey (or maple syrup) to the bowl and stir everything together. You want to mix until you have a sticky dough-like consistency. If the mixture feels too dry, add a bit more honey or syrup.
  5. Once your mixture is well combined, take small spoonfuls and roll them into balls. Aim for about 1 inch in diameter.
  6. Place the formed snowballs on a baking sheet lined with parchment paper.
