HAMBURGER NOODLE SOUP
Ingredients:
– 1 lb ground beef
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 cup carrots, chopped
– 1 cup celery, chopped
– 6 cups beef stock
– 1 can (14.5 oz) diced tomatoes
– 2 cups egg noodles
– 1 tablespoon Worcestershire sauce
– 2 teaspoons Italian seasoning
– Salt and pepper to taste
– Fresh parsley for garnish (optional)
Directions:
1. In a large saucepan over medium heat, start cooking the ground beef until it’s browned and crumbly, which should take about 5-7 minutes. Drain any excess fat at this point.
2. Next, add the chopped onion and minced garlic. Allow them to sauté in the pot for 3-4 minutes, stirring frequently, until the onion is softened and translucent.
3. Add the carrots and celery to the pot, sautéing for another 5 minutes until the veggies are beginning to soften.
4. Now it’s time to add the beef stock and canned diced tomatoes, stirring everything together well.
5. Stir in the Worcestershire sauce, Italian seasoning, and a pinch of salt and pepper. Bring it to a boil on high heat.
6. Reduce the heat to a simmer once it’s boiling and add the egg noodles. Cooking them typically takes about 8-10 minutes, so stir occasionally until they reach your desired firmness.
7. Taste and adjust the seasoning accordingly, adding additional salt, pepper, or Worcestershire sauce if needed for enhanced flavor.
