CHEESY BUFFALO CHICKEN LASAGNA WITH RANCH DRIZZLE 🥘🧀

Ingredients:

  • 10 lasagna noodles
  • 2 cups shredded cooked chicken
  • 1 cup buffalo sauce (adjust to taste)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup freshly chopped parsley (for garnish)
  • 1/2 cup ranch dressing (for drizzling)

Directions:

  1. Start by preheating your oven to 375°F (190°C). This ensures that the lasagna bakes evenly and thoroughly when assembled and placed in the oven.
  2. In a large pot of boiling salted water, cook the lasagna noodles according to the package instructions until al dente. Normally, this takes about 8-10 minutes. Once cooked, drain and rinse with cold water to stop the cooking process. Lay them flat on a clean, dry surface to avoid sticking.
  3. In a large mixing bowl, combine the shredded cooked chicken with buffalo sauce. Stir until the chicken is well coated with the spicy sauce. Adjust the buffalo sauce to your preference for heat.
  4. In another bowl, mix the ricotta cheese, garlic powder, onion powder, salt, and black pepper until well combined. This mixture will provide a creamy, flavorful layer in your lasagna.
  5. To assemble the lasagna, spread a thin layer of the buffalo chicken mixture on the bottom of a greased 9×13 inch baking dish. Place 3 lasagna noodles over the mixture, followed by half of the ricotta mixture, and then 1 cup of mozzarella cheese. Repeat with another layer – more buffalo chicken, 3 noodles, the remaining ricotta mixture, and 1 cup of mozzarella.
  6. For the final layer, place the last 4 lasagna noodles on top, cover with the remaining buffalo chicken, then sprinkle the rest of the mozzarella and cheddar cheese over the whole thing.
  7. Cover the baking dish with aluminum foil to prevent the cheese from browning too quickly. Bake for 25 minutes, then remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden brown.
  8. While the lasagna is baking, prepare the ranch drizzle. In a small bowl, combine ranch dressing with a bit of hot sauce if you like an extra kick.
  9. Once the lasagna is out of the oven, allow it to cool for about 10 minutes before slicing. Drizzle the ranch dressing on top and garnish with freshly chopped parsley for a pop of color and freshness.
