DARK CHOCOLATEY WITH ORANGE GINGER SNOWBALLS 🍫🍊❄️
Ingredients:
- 1 cup dark chocolate chips
- 1/2 cup unsweetened cocoa powder
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup finely chopped crystallized ginger
- 1 teaspoon orange zest
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- Additional cocoa powder for dusting
Directions:
- Begin by melting your dark chocolate chips. You can do this by placing them in a microwave-safe bowl and heating them in 30-second increments, stirring in between to prevent burning. Alternatively, melt the chocolate using a double boiler method over simmering water.
- Once melted, remove the chocolate from heat and allow it to cool for about 10 minutes. It should be warm but not hot to the touch.
- In another mixing bowl, combine the almond flour, cocoa powder, orange zest, finely chopped crystallized ginger, sea salt, and vanilla extract. Mix well until all the dry ingredients are evenly combined.
- Pour the melted dark chocolate into the dry mixture. Add the honey (or maple syrup) to the bowl and stir everything together. You want to mix until you have a sticky dough-like consistency. If the mixture feels too dry, add a bit more honey or syrup.
- Once your mixture is well combined, take small spoonfuls and roll them into balls. Aim for about 1 inch in diameter.
- Place the formed snowballs on a baking sheet lined with parchment paper.
- After you’ve rolled all the mixture, pop the tray into the refrigerator for at least 30 minutes. This will help them firm up.
- After chilling, you can roll the snowballs in additional cocoa powder to give them a beautiful finish. Store them in an airtight container in the fridge.
